By: Yours' Truly People are always asking me "How do you eat during the Holidays?" to which I answer "I bring my own grub"... And it looks a little something like this...
"MASHED POTATO" MASH-UP Raw potatoes? Not so much. Raw cauliflower w/olive oil and garlic? Sign me up. Yield: 3-4 servings 1 Head Cauliflower (chopped) 1 Clove Garlic (pressed) 2 T Olive Oil Sea Salt Black Pepper Cayenne Pepper Throw first three ingredients in a food processor and mix until smooth. Add salt, black pepper and cayenne to taste. Just the slightest amount of cayenne provides an exciting zip. So light and tasty! You'll feel like doing Tae-Bo after this dish, tater tot.
MARINATED ZUCCHINI SQUASH Who doesn't love a quality veggie side? This bowl of yum will leave your squashies tender and flavorful. Yield: 3-4 servings 5 Small Zucchinis 1 1/2 Tb Olive Oil 1 Tb Apple Cider Vinegar 1 Clove Garlic (pressed) Sea Salt Black Pepper Slice your zucchinis ultra thin and place in a sealable container. Add the rest of your ingredients (salt and pepper to taste). Seal container and shake it up until well coated/mixed. Let the zuc's marinate for a couple of hours (sealed in the fridge) and serve.
