Raw Vegan Bruschetta Recipe

Be prepared to make a million friends...

Yields roughly 20 servings

3 Roma Tomatoes, chopped

2 cloves Garlic, chopped

1 cup fresh basil, chopped

Juice of half a lemon

Sea salt and fresh ground pepper to taste

2 heads Endive, leaves separated

In a mixing bowl combine tomatoes, garlic, basil, lemon juice, salt and pepper. Scoop a tablespoon of the mixture on each endive leaf. Arrange on a plate and serve.
